Bacon and Eggs Phyllo Breakfast Pizza
A crisp phyllo breakfast pizza layered with feta, cheese, tomatoes, eggs, and bacon.

Ingredients
- 1/2 cup crumbled feta cheese
- 1/3 cup Italian cheese blend
- 1 teaspoon dried oregano
- to taste salt and freshly ground black pepper
- 10 phyllo sheets
- as needed oil-based cooking spray
- 1 cup cherry tomatoes halved
- 3 eggs
- 3 to 4 slices bacon cooked and crumbled
- 1/3 cup Italian cheese blend
- as needed fresh parsley chopped, for garnish
Instructions
Preheat the oven to 375°F and lightly grease a jellyroll pan with cooking spray.
Mix the feta, 1/3 cup Italian cheese blend, oregano, salt, and pepper until spreadable.
Layer three phyllo sheets in the pan, spraying each lightly before adding the next.
Spread one-third of the cheese mixture over the third sheet, then layer three more sprayed phyllo sheets and half of the remaining cheese. Finish with the last four sprayed phyllo sheets.
Spread the remaining cheese over the top sheet, add tomatoes, crack the eggs over them, then sprinkle on bacon and the remaining cheese.
Bake for 18 to 20 minutes until the phyllo is golden and the eggs are set. Rest briefly, garnish with parsley, cut, and serve.
Keep phyllo covered while assembling so the sheets do not dry out.
Optional variation: replace the bacon with cooked turkey sausage and add sliced scallions.
Serve wedges with fresh fruit for a brunch plate.
