avocado feta dip

  • 2 large firm tomatoes diced, about 1.5 cups total
  • 1 medium avocado halved, seeded, peeled, and diced
  • 0.25 cup red onion finely diced
  • 1 clove garlic minced
  • 1 tablespoon fresh parsley chopped
  • 0.5 tablespoon fresh oregano chopped
  • 1.5 tablespoons olive oil
  • 1 tablespoon white vinegar or apple cider vinegar
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper freshly ground
  • 0.5 cup feta cheese crumbled

Preparation Steps

  • In a medium bowl, combine the tomatoes, avocado, red onion, garlic, parsley, oregano, olive oil, white vinegar, salt, and black pepper. Mix gently to combine. Taste and adjust seasoning with more salt and pepper if needed.
  • Add the crumbled feta cheese and gently stir to incorporate. Do not overmix to keep the dip chunky.
  • Serve immediately or cover and refrigerate for up to 2 hours to enhance flavors. Stir gently before serving if chilled.

Notes

To prevent browning, press plastic wrap directly onto the surface of the dip when storing. Best enjoyed within 6 hours of preparation. Add a squeeze of lemon juice if you prefer extra brightness.
