Apple Cider Whoopie Pies

Delicious apple cider whoopie pies with a spiced cake and creamy frosting.

  • 1.5 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 1 cup apple cider
  • 0.5 cup unsalted butter, softened
  • 2 large eggs

Preparation Steps

  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • In a large bowl, whisk together flour, sugar, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  • In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in apple cider.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Drop by rounded tablespoons onto prepared baking sheets, leaving space between each whoopie pie.
  • Bake for 12-15 minutes, or until golden brown. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

These whoopie pies are best served the day they are made, but can be stored in an airtight container at room temperature for up to 3 days.
