Wash and trim the ends off the zucchini. Cut each zucchini in half lengthwise, then cut each half into 0.5-inch thick wedges.
Set up a dredging station with three shallow bowls. In the first bowl, place the flour. In the second bowl, whisk the eggs. In the third bowl, combine the panko breadcrumbs, garlic powder, salt, and pepper.
Dip each zucchini wedge first into the flour, shaking off any excess. Then dip into the beaten eggs, letting any excess drip off. Finally, coat evenly with the panko breadcrumb mixture.
Preheat your air fryer to 400°F (200°C).
Arrange the breaded zucchini fries in a single layer in the air fryer basket. Do not overcrowd the basket; cook in batches if necessary.
Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
Serve immediately with your favorite dipping sauce.
