Preparation Steps
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until potatoes are tender.
Add broccoli florets and cook for another 5 minutes, or until broccoli is tender-crisp.
Remove from heat and carefully blend the soup using an immersion blender until smooth and creamy.
Stir in milk, salt, and pepper. Heat through gently. Do not boil.
Serve hot and enjoy!
Notes
For a richer flavor, use chicken broth instead of vegetable broth. You can also add a dollop of sour cream or Greek yogurt before serving.
