  • 4 cup Broccoli florets Fresh or frozen
  • 2 medium Potatoes Peeled and diced
  • 1 medium Onion Chopped
  • 4 cup Vegetable broth Low sodium
  • 1 cup Milk Any kind
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until potatoes are tender.
  • Add broccoli florets and cook for another 5 minutes, or until broccoli is tender-crisp.
  • Remove from heat and carefully blend the soup using an immersion blender until smooth and creamy.
  • Stir in milk, salt, and pepper. Heat through gently. Do not boil.
  • Serve hot and enjoy!

Notes

For a richer flavor, use chicken broth instead of vegetable broth. You can also add a dollop of sour cream or Greek yogurt before serving.
