7-Layer Taco Pasta Casserole

This delicious 7-Layer Taco Pasta Casserole combines the best elements of a taco with pasta for a hearty and satisfying dish perfect for family dinners or potlucks.

  • 1 pound ground beef lean
  • 1 packet taco seasoning about 1 ounce
  • 12 ounces pasta penne or rotini works well
  • 1 cup salsa mild or spicy, as preferred
  • 2 cups shredded cheese Mexican blend
  • 1 can black beans rinsed and drained
  • 1 cup corn frozen or canned
  • 1 cup sour cream for topping

Preparation Steps

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning and water according to the packet instructions. Simmer for 5 minutes.
  • Cook pasta according to package instructions. Drain and set aside.
  • In a large mixing bowl, combine cooked pasta, taco meat, salsa, black beans, and corn. Mix well.
  • Transfer the mixture into a greased 9x13 inch baking dish. Top with shredded cheese.
  • Bake in preheated oven for 20-25 minutes or until cheese is melted and bubbly.
  • Serve hot and top with sour cream, if desired.

Notes

This casserole can be made ahead and stored in the refrigerator for up to two days before baking. Simply bring to room temperature before placing in the oven.
