7-Layer Pierogi Casserole

A mouth-watering layered casserole inspired by traditional pierogi flavors.

Ingredients

  • 1.5 pounds potatoes peeled and diced
  • 0.5 cup sour cream
  • 2 cups shredded cheddar cheese divided
  • 0.5 cup onions finely chopped
  • 0.5 teaspoon salt
  • 1 pound cooked and crumbled bacon
  • 1 box lasagna noodles cooked and drained

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • Boil potatoes until tender. Mash with sour cream and salt. Stir in 1 cup of cheese and half of the chopped onions.
    1.5 pounds potatoes, 0.5 cup sour cream, 0.5 cup onions
  • Layer half of the lasagna noodles in a greased 9x13 inch baking dish. Spread with half of the potato mixture, bacon, and remaining onions. Repeat layers.
    1 pound cooked and crumbled bacon, 0.5 teaspoon salt, 1.5 pounds potatoes
  • Top with remaining cheese. Cover and bake for 30 minutes. Uncover and bake for an additional 10 minutes or until cheese is bubbly.
