30 Minute Chicken Marsala with Mushrooms
Golden chicken cutlets and browned mushrooms simmer briefly in a glossy Marsala pan sauce for a classic weeknight dinner.

Ingredients
- 4 thin chicken breast cutlets
- 1/2 cup all-purpose flour
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons butter divided
- 8 ounces cremini mushrooms sliced
- 3/4 cup dry Marsala wine
- 1/2 cup chicken broth
- 2 tablespoons fresh parsley chopped
Instructions
Season the chicken with salt and pepper, then lightly coat it with flour and shake off the excess.
Heat olive oil and one tablespoon butter in a large skillet over medium-high heat. Brown the chicken for 3 to 4 minutes per side, then transfer it to a plate.
Add the mushrooms and cook until browned, about 5 minutes.
Pour in the Marsala and broth, scrape up the browned bits, and simmer until slightly reduced.
Return the chicken to the skillet, simmer for 3 minutes, then swirl in the remaining butter and finish with parsley.
