- 1.5 cups brown lentils
- 1 tbsp olive oil
- 1 large yellow onion diced
- 3 cloves garlic minced
- 3 medium carrots chopped
- 2 celery stalks celery chopped
- 6 cups vegetable broth
- 1 can diced tomatoes 14.5 oz
- 1 tsp ground cumin
- 0.5 tsp smoked paprika
- 0.25 tsp crushed red pepper flakes optional
- 1 bay leaf bay leaf
- 0.25 tsp black pepper
- to taste salt
- 0.5 cup fresh parsley chopped, for garnish
Instructions
Preparation Steps
- Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté for about 5-7 minutes until softened.
- Add minced garlic and cook for another 1 minute until fragrant.
- Stir in the lentils, diced tomatoes (with juices), vegetable broth, bay leaf, cumin, smoked paprika, and crushed red pepper flakes.
- Bring the soup to a boil, then reduce heat to a simmer. Cover and cook for 40-45 minutes or until lentils are tender.
- Remove bay leaf, season soup with salt and black pepper to taste. Ladle soup into bowls and garnish with fresh parsley before serving.
Notes
This soup stores well and tastes even better the next day. Perfect for meal prep and freezing.
